What is fried cheese?
Fried cheese isn’t new. It’s exactly as it sounds. Cheese (either shredded or sliced), placed on a griddle or frying pan and melted until it gets crispy around the edges and gooey in the center. You may have even seen the viral fried cheese-wrapped burritos from Los Angeles-based pop-up Low Key Burritos or the flying saucer of cheese that tops burgers at Shady Glen in Connecticut. Even home chefs can get in on the fun these days by frying Halloumi or bread cheese on the stove. But frying cheese and putting a pickle inside has upped the game.

How do you make the pickle in a blanket?
TikTokker Claire (@clurmurr) had her video go viral with 13 million views as she details exactly how to make the unnamed salty snack (which her commenters called a “Chickle,” “Picklet” and a “Blankle”). You only need two ingredients: pickles and cheese.
The process is simple: start with a pan sprayed with cooking spray and lay down a slice of provolone (she says you can use mozzarella too).
When the cheese melts and gets sizzling hot, plop a pickle into the center, wait for the cheese to get even more golden, then gently flip the sides of the cheese up into the pickle, swaddling it like the salty baby that it is.
Drain the excess oil off onto a paper towel, wait for it to cool and take a crispy, crunchy, cheesy bite of heaven. Commenters point out that this snack is not only gluten-free but is vegetarian and keto too (so that means it’s healthy, right?).

Tips for success: don’t spray the pan with too much oil, but use just enough to lightly coat the pan. You’re not really pan-frying the cheese as it’ll slide around and become too gooey; you just don’t want it to stick while it’s becoming its best crispy self. Don’t crowd the pan with cheese slices as they’ll all just melt into each other (which is a delicious mistake, but still). Keep the heat at a medium-low so the cheese doesn’t burn and be careful adding a super juicy pickle to the pan as the brine will hit the hot oil and can sizzle in a bit of a scary way. Also, be sure to choose your pickles wisely. The sturdier the pickle, the better since you’ll get more crunch and less mush.

There are countless cheese/pickle combos to be had here. Cheddar, pepper jack or Havarti would be delicious paired with dill, bread and butter or even cornichon pickles (get even wilder with banana pepper slices or kimchi). Boston-based fav Grillo’s Pickles even hopped on the trend, putting out their own spin on their TikTok page.

Some comments in @clurmurr’s original video call for the cheesy pickle to be dipped in ranch. Almost any sauce would be tasty with this, especially one with a little creaminess to it like Trader Joe’s Magnifisauce which would make this whole shebang taste like a cheeseburger (but without the actual burger). Mustard or a garlic aioli would also be an excellent addition to play off the tangy punch of the pickle. Sprinkling the cheese with your favorite seasoning blend like Tajin, ranch seasoning or even a pinch of red pepper flakes would kick it up a notch, too. Commenters on @clurmurr’s video suggest variations like melting cheese and pickle slices in a greased muffin tin (for a “diet snack”), throwing in a slice of salami or adding crunched-up chips into the mix. @clurmurr even had her own variation with a shredded cheese blend, salami, Trader Joe’s Vegan Creamy Dill Dressing and hot sauce.
