‘I Want Every Bite of Nacho To Have All the Goods on It,’ Says Guy Fieri of His Infamous Trash Can Nachos Recipe
Your Super Bowl party is about to get a major upgrade with Fieri’s bomb recipe.
- To make the SMC (super melty cheese): Place a small sauce pot on medium heat and add half and half. Bring to a simmer, then reduce the heat to low and whisk in the Velveeta cheese until it fully melts. Add the white cheddar, smoked gouda, Tabasco and Worcestershire sauce, and continue to whisk on low heat till all the cheese is fully melted. Set aside and keep warm.
- To make the borracho beans: Use a hand immersion blender or food processor and add half of the rinsed black beans, chicken stock and spices, then blend into a puree. Fold in the last half of the whole black beans for texture. Set in a pot and warm.
- To make the pickled red onions: In a small sauce pot, add all the ingredients except onions and bring to a simmer. Once simmering, pour the pickling liquid over the julienned red onions, making sure they’re submerged and allow them to pickle overnight in the fridge.
- To make the pico de gallo: Add all the ingredients into a mixing bowl and fold them together.
- To assemble the Trash Can Nachos: Preheat the oven to 400 degrees and on a non-stick baking pan spread out an even layer of chips. Drizzle warm SMC over the chips evenly followed by a layer of black bean puree, shredded cheddar and finally diced brisket (or your choice of protein). Drizzle with Guy’s Bourbon Brown Sugar BBQ sauce. Place the nachos into the preheated oven and bake for five to seven minutes until hot and melty.

Fieri will be hosting Guy Fieri’s Flavortown Tailgate presented by Cash App outside of State Farm Stadium in Phoenix on game day (February 12), where attendees will be able to sample his signature nachos. But if you can’t make it to the event, no worries—you can easily recreate this dish at home.

The Secret Behind Guy Fieri’s Trash Can Nachos
Fieri shares the struggle many of us experience when we order nachos: you eat all the toppings and then are left with just plain chips underneath! “When you get nachos at a restaurant, typically you get this big pile of chips with all these ingredients on top,” he says. “After my set of friends or my kids dig into it, you’ve got everything missing from the top and you’re left with a plate full of chips.”
So, Fieri set out to up the game on nachos. He wanted to figure out a way to put all the ingredients together, keep them warm so they weren’t getting cold, stack them up and serve them. A tall order—literally!
First, he made nachos individually on each chip, putting a little bit of every topping on each one. “But it looked too fancy,” says Fieri. “It looked like you were having tray-passed appetizers.”
Next, he tried placing layers of nachos with all the fixings (cheese, beans, meat, salsa and pickled onions) inside an aluminum measuring cup that he cut the bottom out of. “I thought the name trash can was funny because you have everything shoved in it,” he says.
And that’s how his Trash Can Nachos were born. The aluminum container did the trick for keeping the nachos warm and ensuring every bite had the perfect amount of toppings on it. “That’s the key,” he says. “I want every bite of that nacho to have all the goods on it. That’s how it happens.”

How To Serve Trash Can Nachos
If you have a used large can available, you can remove both the top and bottom of the can and make sure there are no sharp edges. Place the can on the plate and with a spatula, stack layers of the baked trash can nachos inside the can to about one inch from the top.
Garnish the top of the nachos with a drizzle of sour cream, pico de gallo, sliced jalapenos, drained pickled red onions and lastly, crumbled cotija and fresh cilantro. Serve by carefully lifting the can off to reveal the stack of nachos.
