Everything in every bite! These bowls don’t mess around.
- Slice the fish into bite-size pieces. Lightly drizzle the fish with olive oil and add 1/2 the packet of taco seasoning, stir to thoroughly combine and cover the fish with seasoning.
- Thinly slice the cabbage, onion, and jalapeño into a bowl.
- In a separate bowl, mix the mayo, yogurt, juice of one lime, 2 tbsp chopped cilantro, and salt and pepper to taste.
- Pour about 1 cup of the yogurt mixture over the cabbage and toss to combine, then set aside. Save rest for a drizzle over the final dish.
- Warm the beans in a pot or microwave.
- Heat 1 tbsp olive oil in a sauce pan over medium heat, add the fish and cook through. Remove with a slotted spoon to a paper towel-lined plate to soak up some of the oil.
- Time to assemble, layer the rice, beans, and cabbage, then top with fish. Add avocado slices, chopped cilantro, a good squeeze of lime, and your favorite hot sauce. Serve warm.
Let’s get straight to the point. That’s how I felt when I created this dish. I don’t always love biting into messy tacos, only getting a mouthful of the lettuce, or just the meat, and everything falling out the other side. I want to be in control and get a little bit of everything in EVERY bite. In short, I want it all!
So, I threw all the goodies that make up a fish taco into a big bowl and the result was oh-so-satisfying. You can add more of what you love and tailor it to your liking. I used these amazing black beans I recently discovered at the market by Fillo’s. They are packaged in a small pouch, already seasoned. So delicious and so easy. I also use Siete brand taco seasoning for the fish, this makes it very quick and easy prep.
You can pan-fry or grill the fish. I did mine in a pan for a quick version, but some charring would add wonderful flavor to this dish. And don’t forget the hot sauce! These bowls are great for entertaining too. You could create a do-it-yourself taco bowl bar and set out all the ingredients so guests can build their own.
It IS going to get warm again, I promise! So, add these fish taco bowls to your meal plan and manifest those hot summer days.
