Cavallari’s first cookbook True Roots was also a New York Times bestseller and her TV show Very Cavallari was even more of a hit, but alas she won’t be continuing to document her life on the small screen anymore. What do you love about this Game Day Sheet Pan Nachos recipe?
During the fall months, Sundays are my favorite day of the week. I love having friends over to watch the football games and share some snacks. These nachos are my go-to when hosting because they are the perfect finger food. You can throw whatever you want on these nachos—I’ve included what we love, but feel free to make them your own.
How are the recipes in this cookbook different from your last?
They are similar in the sense that there’s no refined sugar, and they’re both gluten free and use limited dairy. True Comfort is heavier dishes though—pure comfort food.
So you’re diet-free and not doing keto currently?
No no, I’ve only ever done keto for a couple different two-week stints. My everyday diet is really just eating real, whole food. I never count calories, I only look at ingredient lists. I try to stay away from processed food.
Which ingredients do you always keep in your fridge and pantry?
I love eggs from my chicken coop, almond butter, wild caught salmon, organic chicken thighs, tons of fresh veggies, berries and kombucha. I want everything I put in my body to be nourishing.
What are your favorite meal prep lunches to make for work?
I love making extra food for dinner and bringing in leftovers. I also love making a big garden salad with some sort of protein.
What kitchen essentials do you rely on the most?
Vitamix, Dutch oven and all the basics, like baking sheets, a garlic press, etc. Nothing too fancy!
What are your favorite restaurants to eat at in Nashville?
Bourbon Steak, Santo, Henrietta Red, Bastion and Cafe Roze.
If you were going to have a cheat day, what would you order for breakfast, lunch and dinner?
Breakfast: Almond milk latte with maple syrup and banana pancakes
Lunch: Nachos or a burger
Dinner: Gnocchi in a brown butter sauce, Waygu, and creamer spinach
Which brands do you prefer to use for your gluten-free pasta recipes?
Tolerant Pasta, Tinkyada or Cappello’s.
